Rocky Road Brownies

A couple of months ago I went on a ski trip with a number of friends to Golden. OK, for me it was an apres ski trip, where I excelled in drinking margaritas, attempting my first shot ski (I’ll let you google that; no wait, now it sounds dirty: it’s a ski with shot glasses attached so four people are doing shots at once.) (EDIT: I stand mistaken. This is a five-shot shot ski. Thanks Tait!), hot tubbing, cooking (for which I volunteered) and participating in much general merriment.

My friend Dawn and I created a meal plan and bought all the groceries to make things easier for everyone attending (and then we divided the cost amongst all the people on the trip). While we had a solid plan, we did wind around the grocery store aisles trying to figure out if we were missing anything. Somehow along the way we decided it would be awesome to get some marshmallows for hot chocolate. And, for some unknown reason, this culminated in purchasing a 1-kilogram (yeah, that’s 2.2 pounds) bag of baby marshmallows. When, at the end of the weekend, we were dividing up the remaining groceries, I somehow was gifted the marshmallows, which, of course, we never opened.

Initially, my instinct was to make browned-butter Rice Krispie treats. Um, then things got busy and I was eating a lot of last-minute meals and that generally translated into eating the entire box of cereal I had bought to make the marshmallow treats. Fail.

And then I starting thinking about some S’mores brownies my friend Andree made. So I started googling and at some point I stumbled across these Rocky Road Brownies. (Why they are related to TLC, I know not.) What I can tell you? They are AMAZING.

Let me put it this way: I usually eat one piece of whatever I’ve baked and then give the rest away. This time? I ate two pieces, gave some away, but held another two back for later. And when those were gone I’m not afraid to say that I was a wee bit sad. Thankfully (or not), I’ve got about 2 pounds of those marshmallows left.

(The original recipe calls for walnuts, but I like pecans, so that’s what I keep around. Also, I didn’t have buttermilk and didn’t want to buy some just for this, so I used 1/4 cup of whole milk with a bit of lemon juice squeezed in.)

Rocky Road Brownies

  • 1/2 cup butter
  • 1/2 cup unsweetened cocoa powder
  • 1 cup sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup buttermilk
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup miniature marshmallows
  • 1 cup coarsely chopped pecans
  • 1 cup semi-sweet chocolate chips

Preheat oven to 350. Butter an 8-inch square pan. (If you have parchment paper, I like to make a sling by lining the pan with a piece of parchment large enough to create overhang outside of the pan.)

In a pot over low heat, combine butter and cocoa, stirring constantly until smooth. Remove from heat and stir in sugar, flour, buttermilk, egg and vanilla. Mix until smooth. Spread evenly in the pan. Bake 25 minutes or until center feels dry. Do not overbake. Remove from oven, sprinkle with marshmallows, pecans and chocolate chips. Return to oven 3 to 5 minutes or just until topping is slightly melted.

Cool in pan on wire rack. Cut into squares.

Pecan Pie Bars

Going through my delicious bookmarks, I clicked a few links for things I wanted to make this week. And then I was mildly surprised to see that about half were from Family Kitchen on Babble.

I’ve only had a few pecan pies in my time. Probably the most memorable was one I was served by the parents of a boy I was dating for a couple of weeks in England. He was the friend of my friend’s boyfriend, so he hung out with us while I was visiting her in the summer between Grade 11 and Grade 12. Saw the sights of England, drank a lot of Buck’s Fizz, spent a week in the Welsh town of Aberdovey and got a temporary boyfriend (who broke it off shortly after I returned to Vancouver, though not after sending me one or two care packages filled with mix tapes. He made me a friendship bracelet too. Ah, young romance.)

As part of our extremely short courtship, he invited me to his parents’ house for dinner. I don’t remember much about that meal, though I’m sure it was chock-full of awkwardness, except that his mother made pecan pie.

Anyway, I’ve never attempted making one (that damn fear of pastry), but when I saw this recipe for Pecan Pie Bars, I was totally smitten. Who doesn’t love a shortbread crust?

The trick with shortbread, I’ve learned, is to wait and let the butter get really gloppy before getting started. I let my butter sit out for 36 hours, I think, so it was perfect for this recipe. But before I got started, I finally took a moment to fix my KitchenAid mixer, which had too large a gap between the mixing implements and the bottom of the bowl, which meant I was constantly scraping down and around the base of the bowl to make sure everything was getting mixed together. Bless the Kitchn for their oh-so-helpful tutorial on how to make that adjustment. It took about three seconds and has greatly improved things.

Just after they went into the oven, I got a text from a friend saying she had unexpectedly come into two tickets to the Heritage Classic. Did I want to go? Although no one would call me a huge hockey fan, I do like to go to games when opportunities present themselves to me. And the thought of attending this game was kind of appealing, despite the negative temperatures.

I thought the bars would be done in plenty of time, but they were still incredibly jiggly in the centre when I went to pull them out (albeit a bit early since my oven sometimes runs a bit hot). I gave them five more minutes. And then another five. And then another three. And then I had to leave. The centre was still not set, but I had high hopes it would solidify more as it cooled and then after a night in the fridge.

It was not to be.

When I cut into the bars the next day, the edges were fine, if not slightly (and deliciously) gooey. The centre fell completely apart in a liquid mess of pecans and sticky goo. Not going to lie, I ate part of it with a spoon, but that’s why there are only photos of edge pieces.

The sauce also bubbled up over the top of the crust in some places, sneaking under to the bottom of the pan. This was kind of a lovely accident, really because it baked into the crust.

I will definitely make these again, this time letting them bake a little bit more.

Pecan Pie Bars

for the crust:

  • 1 1/2 stick unsalted butter at room temperature
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 1/2 cup unbleached flour

for the filling:

  • 1 cup corn syrup
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 3 tablespoons melted butter
  • 3 eggs, lightly beaten
  • 1/2 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons flour
  • 1/4 teaspoon cider vinegar
  • 2 cups pecans

Preheat oven to 325.

For the crust: In a medium bowl, cream together butter, sugar, and salt. Add in flour and mix until just incorporated. Press into the bottom and up the sides of an 8-inch square pan. The crust should come up at least two inches on the sides.

For the filling: In a large bowl, whisk together corn syrup, sugars, melted butter, eggs, salt, vanilla, flour, and vinegar. Spread pecans out in the bottom of the crust. Pour sugar mixture over the top. Bake for 40-50 minutes, or until the center is just set.

Cool completely and cut into squares.

Dolly Bars

I like my blog stats. I’m always interested to see where people are coming from or what search words have led them to my little site. I am usually grateful to anyone and everyone who has linked up to my blog and I am quick to investigate a referrer when I’m getting more than a handful of hits coming in from a particular place.

So, when I saw I was getting visitors from a bulletin board on the America’s Test Kitchen website, I got curious.

I wish I hadn’t.

It was a discussion linking back to my rhubarb crumb cake post (which seemed odd, how did they even find that one particular post) with the subject of: Okay, guys, am I the only one who thinks this photo is great?

At first I thought she was referring to my rhubarb and/or cake photos, but it turned out she was referring to my blog’s header. Me and my red patent shoes and my red mixing bowl.

There were a few nondescript responses. And then the original poster said something that left me feeling like ice. I think it’s a good thing that I don’t have a photographic memory because it’s probably best I don’t remember the comment exactly. Instead, I’ll give you a summary: It looks as if this woman and her “pleasantly plump” calves (because that I do remember) has eaten everything before it could go in the oven and has had to lie down to digest it all.

And then, further down, another comment that struck even deeper.

No (Original Poster), when I opened the link and saw that across the top, I thought “Wa-huh? Did she get murdered while she was stirring her cookie dough? Or did she go into a diabetic coma from too much sugar? Or is she trying to look alluring with that red plastic bowl from Target and the red plastic shoes from Payless?” I couldn’t quite figure out the point of the picture.

It certainly does not make me want to eat….her cooking.

I felt ill to read that.

I have long known the Internet to be a place where meanness spreads easily. After all, I’ve read the comments on some of my articles for the Herald. People are quick to criticize or make mean comments. Anonymity, no doubt, plays a significant role in how people choose to comport themselves online.

And I know there is a valuable lesson in here about paying attention to the 99 people who like you and ignoring the one critic.

But here’s the problem.

These comments from these women confirmed all the things I feared people thought about me.

The original poster later took down her comments, editing the first post to say she had never intended to offend anyone. My initial reaction was to be appreciative that she seemed sorry. But, after a few minutes, I realized that her edited comment was just as strange. How did she not think people would be offended? Did she believe her comments were being made in a vacuum and the object of her criticisms would not find out? Likely, yes. But she was mistaken.

More than 60 people visited my site because of that bulletin board discussion. I have no idea what the others thought, but I can safely say that I’d prefer to get my traffic some other way.

And yes, a small part of me thinks they would probably be less mean if they had a nice slice of cake once in a while.

So, on that note, (she says, clapping her hands together), that is enough time wasted on that. Let’s eat something delicious!

Dolly Bars I

For elective choices in Grade 8 at high school (because there was no junior high in Vancouver and I’ll spare you the woes of being a 12-year-old girl going to school with 18-year-old boys who would never look at a kid like me) one could decide between food/wood/metal and home ec (food and sewing). I had no interest in working around giant saws that would probably take my finger off, so I chose home ec.

I don’t remember many recipes worth saving, except baby cheesecakes that used vanilla wafers for a crust and these things called Dream Bars. I kept the cheesecake recipe but have no idea where the one for the bars went, which is too bad because I think about them pretty often. (As in, more often than really is reasonable to reminisce about a baked good.) They were sort of chewy-gooey with a shortbread type crust and a sweet layer on top. I think there were pecans involved. And chocolate chips. And that’s about all I remember. I’ve googled until the cows come home, but nothing that calls itself a “dream bar” is actually what I remember.

And then I saw Dolly Bars. They seemed a reasonable facsimile and, therefore, worth a try.

I found this recipe on Smitten Kitchen who adapted it from Homesick Texan. I didn’t notice the discrepancy in the amount of sweetened condensed milk until after it became clear this recipe was a bit of a failure for me. A little more online research showed that almost every recipe calls for an entire can of the stuff, while the one I used called for about 1/3 of a cup. My toppings didn’t really stay stuck to the graham cracker base as a result. Still tasty, but a bit of a failure. So, I’m going to try this again and use the entire can.

  • 1/2 cup (1 stick) salted butter, cut into large pieces
  • 1 1/2 cups graham crackers crumbs (about 8 graham crackers, pulsed in a food processor)
  • 1 1/2 cups chocolate chips
  • 1 cup butterscotch chips
  • 1 cup shredded coconut
  • 1 cup pecans, coarsely chopped
  • 1 14 oz. can sweetened condensed milk

Preheat oven to 350 degrees.

Melt butter in microwave in heatproof bowl until just melted when stirred. Add graham cracker crumbs. Mix and then press evenly into the bottom of 8×8 baking pan.

Layer coconut, pecans, butterscotch and chocolate chips on top of graham cracker base. Pour sweetened condensed milk over whole mixture.

Bake in oven for 25 to 30 minutes, or until the top is light brown.

Evil blog Brownies

I’m starting to think this blog could be very dangerous.

It used to be that when I had strange cravings for late-night sweets or snacks, I could resist them until the temptation passed. But on Thursday night, when an intense and undeniable craving for brownies overwhelmed me, I had a supposedly legitimate reason to fulfill it: I could make a blog entry out of it.

I fear I set a dangerous precedent that night.

When I decided to make the Red Velvet Cake oh-so-many weeks ago, I bought a tin of cocoa — the only one I could find besides the generic grocery brand. Back at home, I discovered that at some point in recent history I had already purchased a tin of Fry’s Cocoa, presumably when I was on some kick to make something chocolate-y and then never followed through. I buried the tin in my baking cupboard — which is, let’s face it, not the most organized space — and completely forgot about it. Until I came home with the second tin.

Brownies seemed like a logical thing to do with an overwhelming supply of cocoa. And, as the snow fell outside (in May for goodness sake), I thought a little baking may be in order.

The best part about the recipe (compliments of the back of the Fry’s Cocoa tin — why research if you don’t have to?) is that I didn’t have to wait for butter to soften as the recipe calls for it to be melted. Virtually instantaneous satisfaction could be achieved!

A little sugar, some vanilla and flour, thoroughly sifted cocoa, eggs and I was good to go. I also had in my cupboard some halved pecans, which I ended up breaking into smaller pieces and throwing into the batter for a little contrast. I didn’t even bother breaking out my hand mixer for this and barely worked out my arm mixing everything together because it took so little effort.

I should have read the recipe all the way through, however, because by the time I got to the fact that four eggs were going into the batter I realized I probably should have halved it. Instead of a nice little pan of brownies, I ended up with a 9″ x 13″ tray of them.

I was too lazy to wander out in the snow for the vanilla ice cream the brownies so badly wanted to be paired with. But, lo, what is this in my fridge? The quarter-cup dregs of whipping cream? Hello freshly-whipped- cream puffed into a little cloud to sit atop my fudgey brownie.

As it was, I didn’t end up having to eat the entire pan myself. I was unexpectedly back at work on my day off the next day and my plans to make cookies for an event that night were dashed. But showing up with a plate of brownies was definitely the next best thing.

Fry’s Fudgey Brownies

  • 1 1/3 cups all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup butter
  • 1 cup Fry’s Cocoa (but, presumably, other cocoas would also work)
  • 2 cups sugar
  • 4 eggs
  • 1 1/2 tsp. vanilla
  • 1 cup chopped nuts (optional, obviously)

Stir together flour, baking powder and salt in a small bowl. Melt butter in a large saucepan. Remove from heat. Stir in cocoa. Blend in sugar, eggs and vanilla. Blend in dry ingredients and nuts. Pour batter into greased 13x9x2″ rectangular baking pan. Bake in preheated 350 oven for 30 to 35 minutes or until done. Cool.
